Jimjoca Vineyard Pinot Noir
Wine
Stonier Jimjoca Vineyard Pinot Noir is grown a short distance east of Balnarring on the Mornington Peninsula.
Most of the fruit is destemmed with only a small portion kept as whole bunches. The ferment typically begins with wild yeasts, then is completed with cultured yeast. Fermentation typically occurs in open fermenters.
Maturation takes place in a mix of small French oak barriques and larger puncheons. The wine is bottled without filtration.
Deep red, Stonier Jimjoca Vineyard Pinot Noir has dark fruit flavours, earthy notes and textured tannins. Cellaring potential is four years.
